Hot Honey Chicken Sandwich

Ingredients

For the Chicken Marinade:

  • 1 Cubanelle pepper
  • Orange peppers
  • Rounds of green pepper
  • 1 Red long hot pepper
  • 1 Scotch bonnet
  • 6 cloves of garlic
  • 1/2 cup white vinegar
  • Boneless, skin-on chicken thighs

For the Ranch Dressing:

  • Mayo
  • Sour cream
  • Hot mustard
  • Tarragon vinegar
  • Red wine vinegar
  • Red wine
  • Buttermilk
  • Dill, parsley, and chives (fresh, chopped)
  • Lemon zest and juice

For the Pickle Slaw:

  • Parsley, chives, and dill (fresh, chopped)
  • Pickled jalapeños
  • Onion
  • Dried chili flake
  • Olive oil
  • Lemon juice
  • Salt and pepper

Other:

  • Buns
  • Butter
  • Salt

Instructions

  1. Prepare the Chicken Marinade:

    • Blend together the Cubanelle pepper, orange peppers, green pepper, red long hot pepper, scotch bonnet, and garlic with the white vinegar.
    • Coat the chicken thighs in this marinade and roast in a preheated oven until cooked through.
  2. Make the Ranch Dressing:

    • Combine mayo and sour cream in a bowl.
    • Mix in a small amount of hot mustard, tarragon vinegar, red wine vinegar, and red wine.
    • Stir in buttermilk, followed by adding chopped dill, parsley, and chives.
    • Finish with lemon zest and juice, adjusting the seasoning to taste.
  3. Assemble the Pickle Slaw:

    • In a bowl, combine chopped parsley, chives, and dill.
    • Add pickled jalapeños, finely chopped onion, a sprinkle of dried chili flake, and mix.
    • Dress with olive oil, lemon juice, and season with salt and pepper to taste.
  4. Prepare the Buns:

    • Toast the buns lightly in the oven.
    • Spread butter on the buns and sprinkle a bit of salt on top.
  5. Assemble the Sandwiches:

    • Place a piece of the roasted chicken on each bun.
    • Top with a generous amount of ranch dressing and a helping of pickle slaw.

[00:00] This is f**ked town. This is like, maybe one of the greatest things I've ever made, I feel. On cooking something today, I'm gonna be making hot honey roasted chicken thigh sliders. We're gonna take one Cubanelle, put them in the blend dog. A little bit of Some orange peppers, put them in the blend dog.

[00:17] Green pepper rounds it out, okay? Red long, hot, put them in the blend dog. I want it to actually be spicy, so we're gonna put in one scotch bonnet. Boom. Six.

[00:27] Six cloves of garlic. White vinegar. I'm gonna put in like a half a cup. Then we're going to blend this up. Look at that.

[00:34] Vinegar, peppers. Oh yeah. Gonna take a big old, a couple of honeys, a little whisk. Then we're just going to bring this up and get this kind of like to a nice consistency and reduce this a bit. So here we have just some boneless, skin on, chow kegs.

[00:49] This is gonna be so good. So we're gonna put this in a preheated oven. This looks so good. It's on the oven! Okay, I'm gonna show you how to make a ranch dressing.

[00:57] It's very easy. You can go up or down, left or right. It's kind of like a mayo, sour cream. I'm gonna put a little bit of hot mustard in it. Little, what's that?

[01:05] Tarragon vinegar, red wine vinegar, red wine. I got a little bit of buttermilk and then we're going to be adding some dill, some parsley and some chives. And then we're going to add some lemon zest, lemon juice. Pitch perfect, fuckos. Okay, now I'm gonna show you how to make like a kind of a pickle slaw.

[01:25] Parsley, some chives, dill. We've got a couple little pickies. Here we go, we've got some pickled jalapenos. Then we've got these little bangers. Perfect amount of onion, little dried chili flake, little olive oil just to bring it together, a little lemon juice, a little salt, oh, and pepper.
